HOT SPINACH ARTICHOKE DIP

Ingredients:
1 - 8oz. package of lowfat or nonfat cream cheese
1 - 10 oz pkg. of frozen spinach, thawed and well drained, chopped
1 - 14oz. can or jar of artichoke hearts, drained and chopped
1/2 cup reduced calorie mayonnaise
1/2 cup freshly grated Parmesan cheese
2 Tbsp of finely chopped basil
1 garlic clove, minced
1/2 pkg. of Knor's onion soup
Pinch of ground pepper

*1/4 cup freshly grated Parmesan cheese to top with before baking.
**1/2 cup of diced tomoatoes for garnish
1 - Round sourdough bread

Mix all ingredients together ~ except tomatoes. Place dip into a small glass baking dish or pie plate. Sprinkle grated Parmesean cheese on top and bake at 350 degrees for 20-25 mins or until lightly browned. You can serve this in the glass dish or scoop into a hollowed sourdough bread bowl. Garnish with diced tomatoes.
To make the sourdough bowl, cut the top of the bread with a good bread knife. Scoop out all of the bread from inside. You can use this extra bread for dipping. Or you can buy extra sourdough bread, slice and serve. Serve with your favorite crackers and veggies.


 
APPLE CINNAMON CRISP

Ingredients:
5 cups - peeled and cubed granny smith apples
1 TBSP - cinnamon
1/4 cup - sugar
1 cup - uncooked oatmeal
1/2 cup - brown sugar
1/2 cup - melted butter
1/3 cup - flour


Preheat oven to 375 degrees. Combine apples with cinnamon and sugar. Place into a greased (I use cooking spray) 8 inch square pan. Combine the rest of the ingredients in a separate bowl until crumbly. Sprinkle on top of apples. Bake for 30 to 45 minutes until apples are tender and top is brown. Garnish with whipped cream or serve with yummy vanilla ice cream. This is a wonderful quick dessert that my family loves!

 
 
BREAD PUDDING

Ingredients:
2 cups dry bread cubes
4 cups milk, scalded
3 tbsp melted butter
2 eggs
1/4 tsp salt
1/4 tsp nutmeg
1 tsp vanilla
1/2 cup raisins


Soak bread in milk until soft. Beat eggs until light. Add butter, sugar, salt, nutmeg, vanilla and raisins to eggs. Mix thoroughly with bread mixture. Let stand for 15-20 minutes. Pour into greased baking dish and set into a larger pan of hot water. Bake uncovered. at 350 degrees for 1 hour or until knife comes out clean. Serve warm or cold with desired sauce.
